Iced Blueberry Latte

½ cup blueberries
1-3 Tbsp. honey (depending on sweetness preference)
Instant espresso (decaf if desired/better tolerated)
Plant-based milk of choice

Directions
- Make your espresso and set aside to cool.
- Heat ½ cup blueberries, ½ cup water, and 1 Tbsp. honey over medium heat for a few minutes.
- Mash blueberries and continue to stir until slightly thickened. Original recipes have used upwards of ½ cup sugar in the syrup instead of honey, but we wanted to dial back the sweetness and really highlight the blueberries! If you like things a little sweeter, try adding 2-3 Tbsp. honey to start.
- Once everything is nice and purple, transfer the blueberry mixture into a blender and blend until smooth and set aside to cool.
- Add a handful of ice cubes to a glass and pour the desired amount of syrup over the ice. I used about half the batch from the recipe. Next, add ½ cup plant-based milk of choice and lastly, top with your espresso.
- Mix and enjoy!
Notes
- Note: if you don’t like espresso, I’ve seen other people make this recipe with matcha or pour over yogurt, pancakes, or ice cream!
