Air Fryer Breakfast Cookie

½ banana
⅓ cup oats (blend into an oat flour)
½ scoop vegan protein powder
Sprinkle of cinnamon
1 Tbsp. runny nut butter of choice
1 Tbsp. plant-based milk
1 tsp. Baking soda
Chocolate chips and/or additional favourite mix ins
Directions
- Mash half a banana in a bowl. Blend ⅓ cup oats into a fine powder (optional: if you already tolerate oats, feel free to keep them whole) and add to bowl with banana.
- Add ½ scoop vegan protein powder (optional), sprinkle of cinnamon, 1 Tbsp. almond butter (or nut butter of choice), 1 Tbsp. plant-based milk, 1 tsp. Baking soda and mix well.
- Add handful of chocolate chips to oat mixture and mix until well incorporated.
- Bake in the oven at 350 F for 15 minutes or air fry at 360 F for 8-10 minutes.
- Enjoy!
Notes
- Note: you may need to add slightly more milk if the cookie mixture is dry – start by adding 1 Tbsp. at a time.
