Tofu Scramble

Ingredients
- 1 block of firm tofu
- 1 Tablespoon of olive oil (for cooking)
- ½ Red pepper
- ½ Yellow pepper
- 2 Tablespoons of hummus
- Your choice of seasoning
- 1 Siete wrap (almond flour)
Instructions
- Coat a small cooking pan with olive oil (you may need more to coat the pan)
- Add tofu to the pan and mash up into smaller pieces in the pan on medium heat for 5-7 minutes or until golden
- Sprinkle oregano and black pepper (or your choice of seasoning) on the tofu and continue to cook
- Once the tofu is cooked, place the Siete wrap on a dish and add the tofu along with the red and yellow pepper on top of the wrap
- Place hummus on top of the tofu and peppers
- Enjoy!
