Peanut Butter Cup Rice Cakes

1-2 rice cakes
1-2 Tbsp. peanut butter
½-1 banana (½ banana per rice cake)
2-3 Tbsp. dark chocolate/chocolate chips
Sprinkle of sea salt
Directions
- Spread 1-2 Tbsp. peanut butter on a rice cake. Peel banana and cut into slices. Place ½ a banana on each rice cake.
- Melt 2-3 Tbsp. dark chocolate in the microwave in 30 second intervals. Be sure to stir the chocolate between intervals. Optional: add 1-2 tsp. Olive oil with the dark chocolate to make the chocolate more spreadable.
- Drizzle chocolate on top or spread across the rice cake to your desired liking (use more or less chocolate based on your preference). Top with sprinkle of sea salt.
- Place in the freezer for 5-10 minutes or until the chocolate sets. Once the chocolate is slightly hardened, pull from freezer and enjoy!
