Fig, Walnut & Cardamom Loaf (gf, df, v)

1 cup gluten-free oats
1 cup almond flour
2/3 cup buckwheat flour
1.5 tsp cardamom
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 bananas mashed
1/2 cup maple syrup
1/3 cup olive oil
1 tsp vanilla
1 teaspoon of lemon juice or apple cider vinegar
1/3 cup of finely chopped figs
1/3 cup of finely chopped walnuts
2 tablespoons arrowroot flour
Directions
- Pre-heat at 375 and line a medium loaf pan with parchment paper
- Blend oats and walnuts in a food processor and set aside.
- In a large bowl, whisk together the dry ingredients – oat flour, almond flour, buckwheat flour, arrowroot powder, baking soda, salt, baking powder, and cardamom.
- In another bowl, mix the banana, maple syrup, olive oil, vanilla, lemon, and oil until completely mixed.
- Add both the flour and banana mixture together until combined. Stir in the figs. Pour into the loaf pan. Bake for 55 minutes.
