Ingredients

  • 1 cup gluten-free oats

  • 1 cup almond flour

  • 2/3 cup buckwheat flour

  • 1.5 tsp cardamom

  • 3/4 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 3 bananas mashed

  • 1/2 cup maple syrup

  • 1/3 cup olive oil

  • 1 tsp vanilla

  • 1 teaspoon of lemon juice or apple cider vinegar

  • 1/3 cup of finely chopped figs

  • 1/3 cup of finely chopped walnuts

  • 2 tablespoons arrowroot flour

Directions

  • Pre-heat at 375 and line a medium loaf pan with parchment paper
  • Blend oats and walnuts in a food processor and set aside.
  • In a large bowl, whisk together the dry ingredients – oat flour, almond flour, buckwheat flour, arrowroot powder, baking soda, salt, baking powder, and cardamom.
  • In another bowl, mix the banana, maple syrup, olive oil, vanilla, lemon, and oil until completely mixed.
  • Add both the flour and banana mixture together until combined. Stir in the figs. Pour into the loaf pan. Bake for 55 minutes.
