Greek Salad (at its finest)

Serves: 2-3
- 1 English cucumber (seedless/skinless optional), chopped
- ¼ Red onion, chopped
- ½ Green bell pepper, chopped
- 1 cup of cherry tomatoes, sliced
- 5-10 small olives
- 2 Tablespoons of Kite Hill’s (dairy-free) ricotta cheese for topping
- ¼ cup of pumpkin seeds (optional)
- Wash and chop your vegetables
- Place vegetables in a clean medium-sized bowl.
- Place dairy-free ricotta cheese on top of your vegetables (or feta if well-tolerated)
- Sprinkle pumpkin seeds on vegetables
- Enjoy!
