Ingredients
  • 1 English cucumber (seedless/skinless optional), chopped
  • ¼ Red onion, chopped
  • ½ Green bell pepper, chopped
  • 1 cup of cherry tomatoes, sliced
  • 5-10 small olives
  • 2 Tablespoons of Kite Hill’s (dairy-free) ricotta cheese for topping
  • ¼ cup of pumpkin seeds (optional)
Instructions
  1. Wash and chop your vegetables
  2. Place vegetables in a clean medium-sized bowl.
  3. Place dairy-free ricotta cheese on top of your vegetables (or feta if well-tolerated)
  4. Sprinkle pumpkin seeds on vegetables
  5. Enjoy!
